but this weekend was different.
i was fighting something. or developing allergies.
idk. but i was mis-er-able.
i went to walgreens and loaded up on cough & flu gelcaps.
well, first i got my hair done. then i got the meds.
(this girl's got priorities, and no more split-ends!)
i popped some of the drowsy kind & didn't wake up until 1pm sunday afternoon.
this. never. happens.
like, ever.
so at 1:30 i rolled out of bed & made pancakes for me and The Mr.
and oh-my-goodness-gracious.
were they delicious.
before he took a bite, i proclaimed that they were
the best pancakes i've ever made
and after one nibble,
The Mr. agreed.
and considering how many weekends i've made us pancakes, this is quite a bold statement.
so here you have it folks, the best peanut butter banana pancakes you'll ever make:
2 bananas - mashed
2 cups plain greek yogurt
2 eggs
1/4 cup kaluha (i'll explain later...)
1/2 salt
3 tbsp sugar
2 cups flour
1 tsp baking soda
2 tsp baking powder
1/2 cup chocolate chips
peanut butter (to spread)
1. in large bowl mix together banana, yogurt & eggs
2. separately mix dry ingredients
3. combine dry ingredients to wet & add chocolate chips
4. mist pan with non-stick cooking spray
5. using a 1/4 measuring cup, scoop out batter onto pan
6. on low heat (3 or 4), watch for the batter to start bubbling
7. when it's firm enough to stay on the spatula, flip it over!
8. spread peanut butter on top (butter & syrup works fine too :)
repeat & repeat & repeat & repeat
makes 10 - 15 medium sized pancakes
feeds about 6 people
(we've got leftovers for an entire week!)
long story short:: i mixed in the ingredients like usual, but it was super thick and doughy. considering how much decongestant i'd had by that time, it's possible that i forgot something. but whatever. we were out of milk, eggs and oil. and kahula was the next logical comparable ingredient, in my mind. i'm sure vanilla would have worked just fine. or milk, or heck, even more yogurt. whatever floats your boat :)
